Pimento Cheese

Dairy-free, vegan pimento cheese, what?! It's true! This incredible dip / spread is the pinnacle of great comfort food. We grew up eating this Southern delicacy on sandwiches, crackers, and burgers. To be honest, this is one of our favorite things to make. We allow ourselves to make it once a month and basically lick the bowl when it is finished. I guarantee that you will enjoy it!

Ingredients

16 oz. vegan cheddar cheese (suggestion: So Delicious)

8oz softened cream cheese (suggestion: Kite Hill)

8oz diced pimentos

1/4 - 1/2 cup mayonnaise (suggestion: Just Mayo)

1/2 tsp. onion powder

1/2 tsp. garlic powder

1 tsp. freshly cracked pepper

1 Tbsp. diced jalapeños

Directions

Mix all ingredients together. I usually add more black pepper and jalapeños for more of a bite. Wait at least 2 hours for flavors to blend. (This is the hardest part!)

Enjoy on sandwiches, burgers, crackers, veggies or pita chips!

If feeling adventurous...put a bit of strawberry or mango pepper jam on a cracker with the pimento cheese to add an extra something.
